Stir-fried tomato and scrambled eggs [Ingredients] 250g Tomato 4 eggs 1/4 cup (30g) Cooking oil (for scrambling eggs) 1/2 cup (40g) Green onion 1/4 cup (30g) Cooking oil (for infusing with green onion) 1 tbsp (10g) Dark soy sauce 1 tbsp (10g) Oyster sauce Fine salt Pepper 1/2 tbsp (3g) Sesame oil [Directions] 1. Clean the tomatoes and remove the stems, and then slice. 2. Chop the green onion, beat the eggs, and add some salt. 3. Add cooking oil to a pan and make scrambled eggs. 4. Add cooking oil to a pan and stir-fry the green onion to infuse the oil. 5. When the green onion becomes golden, add tomatoes and continue stir-frying. 6. Add dark soy sauce and oyster sauce to the bottom of the pan and stir-fry as if scorching. 7. Season to taste with fine salt and sprinkle some pepper. 8. Mix with the scrambled egg and stir-fry all together. 9. Add sesame oil at the end to finish. 10. Put in a bowl to finish.
